Prepare veggies, wash, peel, and cut carrots and beetroot into thin sticks.
Mix ingredients, combine veggies, mustard seeds, and salt in a jar.
Add water, pour water to submerge veggies and stir well.
Ferment, cover loosely and leave in sunlight for 4-5 days, stirring daily.
Strain & serve, strain the tangy liquid and serve chilled.
