Remove Excess Water, place the noodles in a colander, sprinkle with salt, and let them sit for 10–15 minutes. squeeze gently to remove any extra water.
Prepare the Dressing, mix 1 tablespoon sesame oil, 1 tablespoon rice vinegar, 1 teaspoon soy sauce, and 1 teaspoon honey in a bowl.
Combine Noodles and Dressing, add the drained cucumber noodles to a bowl and toss with the dressing until evenly coated.
Garnish and Serve, top with sesame seeds and chopped dill or mint. add salt and pepper to taste, and serve immediately for the best texture.
