Prepare the dough, in a bowl, mix whole wheat flour, salt, and water to form a smooth dough. let it rest for 10 minutes.
Make the filling, in another bowl, combine grated paneer, chopped coriander, cumin powder, and a pinch of salt. mix well.
Roll out the dough, divide the dough into small balls. roll each ball into a small circle, place a spoonful of the paneer filling in the center, and seal it by pinching the edges.
Roll the paratha, gently roll the stuffed dough ball into a flat circle, making sure the filling doesn’t spill out.
Cook the paratha, heat a tawa or griddle, and cook the paratha with a little ghee or oil, pressing lightly on both sides until golden brown and crispy.
