Prepare the pistachios, toast pistachios for 2-3 minutes, cool, and roughly chop.
Melt the chocolate, melt chocolate using a double boiler or microwave. add butter or coconut oil for a glossy finish, if desired.
Mix in the pistachios, stir most of the chopped pistachios into the melted chocolate, reserving some for topping.
Pour and set, pour the chocolate onto a lined tray or molds, spread evenly, and top with reserved pistachios.
Chill and serve, refrigerate until firm, then break into pieces or unmold. store in an airtight container.
