Watermelon Feta Salad, cut 2 cups of watermelon into cubes. add 1/2 cup crumbled feta and some fresh mint leaves. drizzle with 1 tbsp olive oil and the juice of half a lime. add salt and pepper. Toss gently and chill before serving.

Cucumber Yogurt Salad, slice 1 large cucumber. mix 1/2 cup thick yogurt with 1 minced garlic clove, chopped mint or dill, and salt. pour over cucumbers. mix well. chill for 15 minutes and serve.

Avocado Mango Salad, cube 1 ripe avocado and 1 mango. add 1/2 sliced red onion. squeeze lemon juice on top, add chili flakes, salt, and pepper. toss gently and chill for 10 minutes.

Sprouted Moong Salad, combine 1 cup sprouted moong with chopped cucumber, tomato, and green chili. add lemon juice, salt, coriander, and chaat masala. mix well and serve fresh or chilled.

Tomato & Basil Chickpea Salad, mix 1 cup boiled chickpeas with 1 cup cherry tomatoes and fresh basil. add 1 tbsp olive oil and 1 tbsp lemon juice or balsamic vinegar. season with salt and pepper. toss and serve.
