Prep the Broccoli, finely chop a handful of fresh broccoli florets. steam or microwave them for a minute to soften slightly.

Whisk the Eggs, in a bowl, whisk 2-3 eggs, adding a pinch of salt, pepper, and a dash of milk for a fluffy texture.

Cook the Broccoli and Season, heat a little oil or butter in a non-stick pan. add the softened broccoli, cooking briefly with some salt and pepper for extra flavor.

Pour in the Eggs, pour the whisked eggs over the broccoli in the pan. let it cook on low-medium heat until the eggs set around the edges.

Flip and Serve, gently flip the omelette and cook for another minute. serve hot, garnished with fresh herbs or cheese if desired. enjoy your nutritious broccoli omelette
