Prepare the egg mixture, crack the eggs into a bowl, add salt, pepper, and soy sauce. beat well, then mix in chopped carrots, spring onions, and bell pepper.

Heat the pan, heat a non-stick pan over low-medium heat and lightly grease it with oil or butter.

Cook the first layer, pour a thin layer of the egg mixture into the pan. let it cook partially, then gently roll it from one side to the other using a spatula.

Add more egg mixture,push the roll aside, pour a thin egg layer, cook partially, and roll again. repeat until done.

Slice and serve, remove the omelette roll from the pan, let it cool slightly, and slice into bite sized pieces. serve hot with ketchup or soy dipping sauce.
