Cook the Dal, pressure cook rinsed toor dal with turmeric and water until soft and mushy. mash and set aside.
Cook the Veggies, in another pot, boil the chopped vegetables and tomato with a little salt until tender.
Add Dal & Spices, add the mashed dal to the cooked veggies, mix in sambar powder, tamarind pulp, and more water if needed. simmer for 8–10 minutes.
Prepare Tempering, in hot oil/ghee, add mustard seeds, curry leaves, red chilies, and hing. let them splutter.
Mix & Serve, pour the tempering into the simmering sambar, mix well, and serve hot with rice, idlis, or dosa.
