Ingredients:
– 200g paneer, cubed
– 2 medium-sized tomatoes, chopped
– 1-inch piece of ginger, chopped
– 2-3 green chilies, chopped
– 1/2 teaspoon cumin seeds
– 1/4 teaspoon black pepper powder
– 1/2 teaspoon rock salt (sendha namak)
– 1/2 teaspoon roasted cumin powder
– 1/2 teaspoon garam masala
– 1/4 cup fresh cream (optional)
– 1 tablespoon ghee or clarified butter
– Fresh coriander leaves for garnish

Instructions:
Step 1. Prepare the Makhani Sauce:
– In a blender, combine chopped tomatoes, ginger, and green chilies. Blend until you achieve a smooth puree.
– Heat ghee in a pan. Add cumin seeds and let them splutter.
– Pour the tomato puree into the pan and cook on low heat for about 8-10 minutes until the raw smell disappears and the puree thickens.
– Add black pepper powder, rock salt, roasted cumin powder, and garam masala. Mix well and let it simmer for another 2-3 minutes.

Step 2. Prepare the Paneer:
– Heat a little ghee or oil. Add the cubed paneer and shallow fry until they turn golden brown on all sides. Remove from heat and set aside.

– Once the makhani sauce is ready, add the shallow-fried paneer cubes to the pan.
– Mix gently, ensuring the paneer is well-coated with the sauce. Let it simmer for 2-3 minutes, allowing the flavors to meld together.

Step 4. Finish with Cream (Optional):
– If using fresh cream, add it to the paneer makhani and stir until well incorporated. This adds a creamy richness to the dish.
– Let the paneer makhani simmer for another minute, then remove from heat.

Step 5. Garnish and Serve:
