Vermicelli upma is a delicious and quick South Indian breakfast dish. Here’s a simple recipe for you to try:

1. Ingredients:

– Vermicelli: 1 cup
– Oil: 2 tablespoons
– Mustard seeds: 1 teaspoon
– Urad dal: 1 teaspoon (split black gram)
– Chana dal: 1 teaspoon (split chickpeas)
– Curry leaves: A few
– Green chilies: 2, slit (adjust to taste)
– Onion: 1, finely chopped
– Carrot: 1, finely chopped (optional)
– Beans: 1/2 cup, finely chopped (optional)
– Tomato: 1, finely chopped (optional)
– Ginger: 1-inch piece, grated or finely chopped
– Turmeric powder: 1/2 teaspoon
– Red chili powder: 1/2 teaspoon (optional, adjust to taste)
– Salt: To taste
– Water: 1 1/2 cups
– Lemon juice: 1 tablespoon (optional)
– Coriander leaves: A few sprigs, chopped (for garnish)

2. Instructions

Step 1- Roast the Vermicelli:

– Heat a pan on medium flame.
– Add the vermicelli and dry roast it until it turns light golden brown. Keep stirring to ensure even roasting. Once done, remove it from the pan and set aside.

Step 2- Prepare the Tempering:

– In the same pan, heat oil over medium heat.
– Add mustard seeds. When they start to splutter, add urad dal and chana dal. Sauté until they turn golden brown.
– Add curry leaves and slit green chilies, and sauté for a few seconds.

Step 3- Sauté Vegetables:

– Add the chopped onion and ginger. Sauté until the onion becomes translucent.
– If you are using carrots, beans, or tomatoes, add them now and cook for a few minutes until they are tender.

Step 4- Add Spices and Vermicelli:

– Add turmeric powder, red chili powder (if using), and salt. Mix well.
– Add the roasted vermicelli and stir to combine with the spices and vegetables.

Step 5- Cook the Upma:

– Pour in 1 1/2 cups of water. Stir everything together.
– Bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it cook for about 5-7 minutes or until the vermicelli absorbs the water and becomes soft.

Step 6- Finish and Serve:

– Once the vermicelli is cooked and water is absorbed, turn off the heat.
– Stir in the lemon juice if using, and garnish with chopped coriander leaves.

Step 7- Serve:

– Serve hot, and enjoy your vermicelli upma with coconut chutney or plain yogurt.
