Vegetable stir-fry is a quick and versatile dish that highlights the fresh flavors of various vegetables, making it a perfect option for a healthy meal. Here’s a basic recipe that you can customize with your favorite vegetables and sauces
1. Ingredients
For the Stir-Fry:
– 2 tbsp vegetable oil (or sesame oil for more flavor)
– 1 medium onion, sliced
– 2-3 cloves garlic, minced
– 1-inch piece of ginger, minced
– 1 bell pepper (any color), sliced
– 1 medium carrot, julienned or thinly sliced
– 1 cup broccoli florets
– 1 cup snap peas or green beans, trimmed
– 1 cup mushrooms, sliced
– 1 cup baby corn, sliced (optional)
– 1 cup water chestnuts, sliced (optional)
– 2-3 green onions, chopped (for garnish)
For the Sauce:
– 1/4 cup soy sauce (low sodium recommended)
– 2 tbsp hoisin sauce
– 1 tbsp rice vinegar or apple cider vinegar
– 1 tbsp sesame oil
– 1-2 tbsp honey or maple syrup (optional, for sweetness)
– 1 tbsp cornstarch mixed with 2 tbsp water (for thickening, optional)
– 1/2 tsp red pepper flakes (optional, for heat)
– 1 tsp sugar (optional, to balance flavors)
2. Instructions
Step 1- Prepare the Sauce:
– In a small bowl, mix together soy sauce, hoisin sauce, rice vinegar, sesame oil, honey (if using), and sugar (if using). If you prefer a thicker sauce, stir in the cornstarch mixture. Set aside.
Step 2- Stir-Fry the Vegetables:
– Heat the vegetable oil in a large skillet or wok over medium-high heat.
– Add the sliced onion and cook for about 2 minutes, or until it starts to soften.
– Add the minced garlic and ginger, and cook for another minute until fragrant.
– Add the bell pepper, carrot, broccoli, snap peas, and mushrooms. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. You can adjust the cooking time based on how crunchy or soft you prefer your vegetables.
– If using baby corn or water chestnuts, add them in the last 2 minutes of cooking.
Step 3- Add the Sauce:
– Pour the prepared sauce over the vegetables and toss well to coat evenly.
– Cook for another 2-3 minutes, or until the sauce has thickened and the vegetables are evenly coated.
Step 4- Garnish and Serve:
– Remove from heat and sprinkle with chopped green onions.
– Serve hot over steamed rice, noodles, or as a side dish.
