Here’s a simple and delicious vegan French toast recipe for you!
– 1 cup unsweetened almond milk (or any plant milk)
– 2 tablespoons ground flaxseed
– 1 tablespoon maple syrup (plus extra for serving)
– 1 teaspoon vanilla extract
– 1 teaspoon cinnamon
– 4 slices of thick bread (like sourdough or whole grain)
– Coconut oil or vegan butter (for frying)
– Optional toppings: fresh fruit, nuts, powdered sugar, or nut butter
In a bowl, whisk together the almond milk, ground flaxseed, maple syrup, vanilla extract, and cinnamon. Let it sit for about 5 minutes to thicken slightly.
Heat a non-stick skillet or griddle over medium heat and add a bit of coconut oil or vegan butter.
Dip each slice of bread into the batter, making sure both sides are coated. Allow any excess batter to drip off.
Place the coated bread slices on the skillet. Cook for about 3-4 minutes on each side, or until golden brown.
