Smooth, savory tomato soup is a delicious dish that is great to enjoy anytime of the year. The bold, bright flavor of fresh tomato is wonderful in the spring and summer, and the creamy richness of the broth makes it perfect for enjoying as a hearty lunch or light dinner.

Although this is an easy recipe to make, it does need to be just right to be a truly great tomato soup. Too thick or too thin, and it will lose its magic.

Follow this simple step-by-step recipe for making the most luscious and flavorful tomato soup you’ve ever had!

How to Make Tomato Soup

STEP 1-  Start by melting two tablespoons of butter over medium-low heat in a pot.

STEP 2-  After that, add two bay leaves and quickly brown them in the butter for a few seconds.

STEP 3-  Stir in ⅓ cup finely chopped onions and ½ teaspoon finely chopped garlic after adding them to the pan.

STEP 4- Saute and stir the onions for 3 to 4 minutes, or until they turn transparent.

STEP 5-  Next, add a dash of salt to taste along with the freshly chopped tomatoes (6 to 7 medium tomatoes).

STEP 6- Gently stir.

STEP 7- Simmer the tomatoes for 8 to 10 minutes, covered, over low to medium-low heat, or until they are tender.

* Stir the mixture from time to time and monitor its consistency. Add a splash of water at a time, and mix if the liquids dry out and the tomatoes start to stick.However, take care not to add too much water, as this can dilute the flavorful blend. Take the tomatoes off the heat and let them cool after they have softened.

STEP 8- Once the tomato mixture has cooled to a point that’s safe to work with, add it to a blender jar.

STEP 9-  Puree the tomato soup by blending until it reaches a lovely smooth consistency.

STEP 10-  Although it’s not required, you can choose to filter the puree through a strainer to make the soup even smoother.

* If you decide to filter the puree, make sure everything is removed with a spoon, leaving the seeds behind.

STEP 11- Add the tomato puree to the pot and stir in one cup of water. Mix thoroughly and stir. You can adjust the amount of water to suit your preferred consistency, but be careful not to overthrow the soup by adding too much.

STEP 12-  After that, add 1 teaspoon of raw sugar or white sugar.

STEP 13- Mix the sugar in the tomato soup very well.

* Simmer the tomato soup over low heat until it gets heated but doesn’t boil.

STEP 14-  Stir and season with freshly ground black pepper.

STEP 15- Turn off the heat. Take the pan off the burner and set it down on the counter in your kitchen. Depending on the desired level of richness, add one to two teaspoons of heavy cream. Stir to combine evenly.

STEP 16-  Mix well, taste, and add more salt and pepper if needed.

STEP 17- You can also garnish the tomato soup with a bit of freshly chopped coriander leaves.
