Thalipeeth is a traditional Maharashtrian multigrain flatbread made with jowar, bajra, rice, and wheat flours, mixed with spices, onions, and optional vegetables like carrots. The ingredients are combined into a soft dough, shaped into thin discs, and cooked on a greased skillet until crisp and golden. Holes are made in the Thalipeeth to allow even cooking. Each bread is cooked one at a time, with oil or ghee for flavor. This flavorful flatbread is ideal for breakfast or lunch. Serve hot with yogurt, butter, or spicy chutney for a satisfying and healthy meal.

Ingredients

  • 1/2 cup jowar (sorghum) flour
  • 1/2 cup bajra (pearl millet) flour
  • 1/2 cup rice flour
  • 1/4 cup besan (gram flour)
  • 1/4 cup whole wheat flour
  • 1/2 cup finely chopped onions
  • 1/4 cup grated carrots (optional)
  • 1/4 cup chopped fresh cilantro
  • 1-2 green chilies (finely chopped)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt, to taste
  • Water, as needed
  • Oil or ghee, for cooking

Instructions

  • Prepare the Dough:
    • In a large mixing bowl, combine the jowar, bajra, rice, wheat, and besan flours.
    • Add chopped onions, grated carrots (optional), cilantro, green chilies, cumin seeds, turmeric, red chili powder, coriander powder, and salt.
    • Mix everything well so the vegetables and spices are evenly distributed through the flour.
  • Knead the Dough:
    • Gradually add a little water at a time and knead the ingredients into a soft, pliable dough. The dough should not be too sticky or too dry.
    • Cover the dough and let it rest for 10-15 minutes to allow the flavors to meld.
  • Shape the Thalipeeth:
    • Take a small portion of dough (about the size of a golf ball).
    • On a clean surface or plastic sheet, flatten the dough ball using your fingers, spreading it out to form a circular, thin disc (about 1/4 inch thick).
    • Make a few small holes in the center and sides of the Thalipeeth to allow for even cooking.
  • Cook the Thalipeeth:
    • Heat a non-stick or cast-iron skillet over medium heat.
    • Grease it with a little oil or ghee.
    • Place the flattened Thalipeeth onto the hot skillet and add a few drops of oil or ghee around the edges and in the holes.
    • Cook for 2-3 minutes on each side, pressing gently with a spatula, until it turns golden brown and slightly crisp.
  • Repeat the Process:
    • Repeat the process for the remaining dough, making and cooking Thalipeeth one at a time.
    • Adjust the heat as needed to prevent burning.
  • Serve:
    • Serve hot Thalipeeth with fresh yogurt, butter, or spicy chutney on the side.

  • Add More Vegetables: You can add grated zucchini, radish, or finely chopped spinach for added flavor and nutrition.
  • Control the Heat: Keep the heat at medium to ensure the Thalipeeth cooks evenly without burning.
