Ingredients for Vrat Special Thali:

  • Kuttu Ki Puri (Buckwheat Flour Puri):
    • 1 cup buckwheat flour (kuttu ka atta)
    • 1 boiled potato (mashed)
    • Rock salt (sendha namak)
    • 1 tsp cumin powder
    • Water to knead dough
    • Oil or ghee for frying
  • Aloo Sabzi (Potato Curry):
    • 4 boiled potatoes
    • 2 tbsp ghee
    • 1 tsp cumin seeds
    • 2 green chilies (slit)
    • 1 tsp ginger (grated)
    • Rock salt (sendha namak)
    • 1 tsp coriander powder
    • 1 tsp cumin powder
    • Fresh coriander for garnish
  • Samak Rice (Barnyard Millet Pulao):
    • 1 cup samak rice (barnyard millet)
    • 2 cups water
    • 1 tbsp ghee
    • 1 tsp cumin seeds
    • 2 green chilies (chopped)
    • 1 tsp ginger (grated)
    • Rock salt to taste
    • Fresh coriander for garnish
  • Sabudana Khichdi (Sago/Tapioca Khichdi):
    • 1 cup sabudana (tapioca pearls)
    • 2 tbsp ghee
    • 1 tsp cumin seeds
    • 2 green chilies (chopped)
    • 1 boiled potato (cubed)
    • Handful of peanuts (roasted and coarsely crushed)
    • Rock salt (sendha namak)
    • Lemon juice for taste
    • Fresh coriander for garnish
  • Vrat Dahi (Spiced Yogurt):
    • 1 cup fresh yogurt
    • Rock salt (sendha namak)
    • Roasted cumin powder
    • Chopped cucumber for crunch
    • Fresh coriander for garnish
  • Sweet Dish (Rajgira Halwa):
    • 1 cup rajgira flour (amaranth flour)
    • 2 tbsp ghee
    • 1 cup milk
    • ½ cup sugar
    • ½ tsp cardamom powder
    • Chopped nuts (almonds, cashews)

Step by Step Recipe:

1. Kuttu Ki Puri (Buckwheat Flour Puri):

  • Mix buckwheat flour, mashed potatoes, cumin powder, rock salt, and water to form a smooth dough.
  • Heat oil or ghee in a deep pan.
  • Roll the dough into small puris and fry until golden and crispy.
  • Drain on paper towels and set aside.

2. Aloo Sabzi (Potato Curry):

  • Heat ghee in a pan and add cumin seeds.
  • Once they splutter, add green chilies and grated ginger.
  • Toss in the boiled, cubed potatoes and add coriander powder, cumin powder, and rock salt.
  • Sauté for a few minutes until everything is well-coated.
  • Garnish with fresh coriander and set aside.

3. Samak Rice (Barnyard Millet Pulao):

  • Rinse the samak rice under running water.
  • Heat ghee in a pan and add cumin seeds, green chilies, and grated ginger.
  • Add the samak rice and sauté briefly.
  • Add water, rock salt, and cover the pan to cook on low heat until the rice is soft and fluffy.
  • Garnish with fresh coriander.

4. Sabudana Khichdi (Sago/Tapioca Khichdi):

  • Soak the sabudana in water for 2-3 hours until soft.
  • Heat ghee in a pan, add cumin seeds and green chilies.
  • Add cubed boiled potatoes and sauté for a minute.
  • Add soaked sabudana, crushed peanuts, and rock salt.
  • Cook on low heat until the sabudana becomes translucent.
  • Squeeze in some lemon juice and garnish with fresh coriander.

5. Vrat Dahi (Spiced Yogurt):

  • Whisk the yogurt until smooth.
  • Add rock salt, roasted cumin powder, and chopped cucumber.
  • Stir well and garnish with fresh coriander.

6. Rajgira Halwa (Amaranth Flour Halwa):

  • Heat ghee in a pan and roast the rajgira flour until it turns golden brown and releases a nutty aroma.
  • Add milk and stir continuously to avoid lumps.
  • Once it thickens, add sugar and cardamom powder.
  • Cook until the sugar dissolves, and the halwa reaches the desired consistency.
  • Garnish with chopped nuts.

Serving the Vrat Special Thali:

  • Arrange the kuttu puri, aloo sabzi, samak rice, sabudana khichdi, and vrat dahi on a plate. Serve the rajgira halwa as a sweet ending. This nutritious, sattvic thali is a perfect balance of flavors, ensuring a fulfilling fasting experience.
