Here’s a simple and flavorful recipe for Sukhe Masala Aloo (dry spiced potatoes), a popular Indian dish:
– 500g potatoes (peeled and cut into small cubes)
– 2 tbsp vegetable oil
– 1 tsp cumin seeds
– 1/2 tsp mustard seeds (optional)
– 1/4 tsp turmeric powder
– 1 tsp red chili powder (adjust to taste)
– 1 tsp ground coriander
– 1/2 tsp garam masala
– 1/2 tsp amchur (dried mango powder) or 1 tbsp lemon juice
– Salt to taste
– Fresh coriander for garnish
– Boil the potato cubes in salted water until just tender but not mushy, about 8-10 minutes. Drain and set aside.
– Heat the oil in a large pan over medium heat. Add cumin seeds and mustard seeds (if using). Sauté until they start to splutter.
– Stir in the turmeric powder, red chili powder, and ground coriander. Cook for 30 seconds to release the spices’ aroma.
– Add the boiled potato cubes to the pan. Gently stir to coat the potatoes with the spices. Cook for 5-7 minutes, stirring occasionally, until the potatoes are well-spiced and slightly crispy.
– Sprinkle garam masala and amchur (or lemon juice) over the potatoes. Mix well. Adjust salt to taste.
– Garnish with fresh coriander. Serve hot with chapati, paratha, or as a side dish with a main meal.
