Ingredients:

  • Mutton: 500 grams, cut into pieces
  • Onions 2 large, finely sliced
  • Tomatoes: 2 large, chopp
  • Ginger-Garlic Paste: 2 tablespoons
  • Green Chilies:4, slit
  • Yogurt: 1/2 cup, beaten
  • Mustard Oil 3 tablespoons
  • Cumin Seeds 1 teaspoon
  • Bay Leaves 2
  • Cloves 4
  • Cinnamon Stick 1-inch piece
  • Black Peppercorns 6-8
  • Turmeric Powder 1/2 teaspoon
  • Red Chili Powder 1 teaspoon
  • Coriander Powder 1 teaspoon
  • Garam Masala 1 teaspoon
  • Salt To taste
  • Fresh Coriander For garnish

Instructions:

1. Prepare the Spice Mix:

  • Dry roast cloves, black peppercorns, and cinnamon stick until fragrant. Grind into a fine powder.

2. Sauté Onions:

  • Heat mustard oil in a heavy-bottomed pan. Add cumin seeds, bay leaves, and the roasted spice mix.
  • Add sliced onions and sauté until golden brown.

3. Add Ginger-Garlic Paste:

  • Stir in ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.

4. Cook Tomatoes:

  • Add chopped tomatoes and cook until they are soft and oil starts to separate.

5. Add Mutton:

  • Add mutton pieces and cook on high heat until they are browned.

6. Add Spices and Yogurt:

  • Mix in turmeric powder, red chili powder, coriander powder, and salt. Stir well.
  • Lower the heat, add beaten yogurt, and cook until mutton is tender and the curry thickens.

7. Finish and Garnish:

  • Add garam masala and cook for another 5 minutes.
  •  Garnish with fresh coriander and serve hot.

Spicy Schezwan Fried Rice Recipe

Ingredients:

  • Cooked Rice 2 cups (preferably cold)
  • Vegetable Oil 2 tablespoons
  • Garlic 3 cloves, minced
  • Ginger 1-inch piece, minced
  • Green Bell Pepper 1, diced
  • Carrot 1, diced
  • Spring Onions 1/2 cup, chopped
  • Cabbage: 1 cup, shredded
  • Schezwan Sauce 2 tablespoons
  • Soy Sauce 1 tablespoon
  • Red Chili Sauce 1 tablespoon
  • Vinegar 1 teaspoon

Salt To taste

  • Pepper To tasteGreen Chilies 2, chopped (optional)
  • Spring Onions (for garnish) Chopped

 Instructions:

1. Heat Oil:

  • Heat vegetable oil in a large pan or wok over medium-high heat.

2. Sauté Aromatics:

  • Add minced garlic and ginger, sauté until fragrant.

3.Cook Vegetables:

  • Add diced bell pepper, carrot, and cabbage. Stir-fry until they are slightly tender but still crisp.

4. Add Sauces:

  •  Stir in Schezwan sauce, soy sauce, red chili sauce, and vinegar. Mix well.

5. Add Rice:

  •  Add cold cooked rice and mix thoroughly, ensuring the rice is well-coated with the sauce.

6. Season and Stir:

  • Add salt, pepper, and green chilies (if using). Stir-fry for another 5 minutes.

7. Garnish and Serve:

  •  Garnish with chopped spring onions.
  • Serve hot as a spicy accompaniment to your meal.
