Gujarati Mirchi Bhajiya, also known as mirchi vada, is a popular snack in Gujarat and other parts of India. It features green chilies stuffed with a spiced potato mixture, coated in a gram flour batter, and deep-fried to a crisp perfection. Here’s a recipe to make these delicious bhajiyas:
1. Ingredients
For the Stuffing:
– 6-8 large green chilies (mild to medium heat)
– 2 large potatoes, boiled and mashed
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 tablespoon finely chopped fresh coriander
– 1 tablespoon lemon juice
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 1 teaspoon sugar (optional)
– Salt to taste
For the Batter:
– 1 cup gram flour (besan)
– 2 tablespoons rice flour (for extra crispiness)
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon carom seeds (ajwain)
– 1/2 teaspoon baking soda
– A pinch of baking powder
– Salt to taste
– Water (as needed)
#### For Frying:
– Oil (for deep frying)
2. Instructions
Step 1- Prepare the Chilies:
– Slit the green chilies lengthwise from one side, leaving the stem intact. Remove the seeds carefully to make room for the stuffing. Set aside.
Step 2- Prepare the Stuffing:
– Heat a little oil in a pan. Add mustard seeds and cumin seeds. When they crackle, add the mashed potatoes.
– Add turmeric powder, red chili powder, garam masala, sugar (if using), and salt. Mix well and cook for a few minutes.
– Add lemon juice and chopped coriander. Mix well and let the stuffing cool.
Step 3- Stuff the Chilies:
– Carefully stuff each green chili with the prepared potato mixture. Press gently to secure the stuffing.
Step 4- Prepare the Batter:
– In a bowl, mix gram flour, rice flour, turmeric powder, red chili powder, carom seeds, baking soda, baking powder, and salt.
– Gradually add water and whisk to make a smooth, thick batter. It should be thick enough to coat the chilies but not too runny.
Step 5- Heat Oil:
– Heat oil in a deep frying pan over medium heat.
Step 6- Fry the Bhajiyas:
– Dip each stuffed chili into the batter, ensuring it’s well coated. Carefully slide the coated chilies into the hot oil.
– Fry in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crisp, turning them occasionally for even cooking.
Step 7- Drain and Serve:
– Remove the bhajiyas from the oil and drain on paper towels to remove excess oil.
– Serve hot with chutney or ketchup.
