Singapore Chow Mein (or Singapore Noodles) is a popular dish in many Chinese restaurants outside of China, known for its vibrant color and a mix of flavors. Despite the name, it’s not actually from Singapore but is an example of how Chinese cuisine has been adapted to suit Western tastes. Here’s a recipe you can try at home:

1. Ingredients

– 200g rice noodles or egg noodles
– 2 tbsp vegetable oil
– 1 onion, thinly sliced
– 1 bell pepper, thinly sliced (red, green, or yellow)
– 2-3 cloves garlic, minced
– 1 cup shredded carrots
– 1 cup bean sprouts
– 1/2 cup thinly sliced mushrooms (optional)
– 1/2 cup cooked chicken, shrimp, or tofu (optional)
– 2 tbsp soy sauce
– 2 tbsp curry powder (or a mix of turmeric and chili powder)
– 1 tbsp hoisin sauce (optional)
– 1 tbsp oyster sauce (optional)
– 1 tsp sesame oil
– Salt and pepper to taste
– Chopped scallions and cilantro for garnish (optional)

2. Instructions

Step 1- Prepare the Noodles:

– Cook the noodles according to the package instructions. If using rice noodles, soak them in hot water until soft. Drain and set aside.

Step 2- Stir-Fry the Vegetables:

– Heat the vegetable oil in a large pan or wok over medium-high heat.
– Add the sliced onions and bell peppers. Stir-fry for about 2 minutes until they start to soften.
– Add the garlic and continue to stir-fry for another 30 seconds until fragrant.
– Add the carrots and mushrooms (if using). Stir-fry for another 2-3 minutes until the vegetables are cooked but still crisp.

Step 3- Add Protein:

– If using cooked chicken, shrimp, or tofu, add it to the pan and stir to combine with the vegetables.

Step 4- Season the Dish:

– Sprinkle the curry powder over the vegetables and protein. Stir well to ensure the powder is evenly distributed.
– Add soy sauce, hoisin sauce, and oyster sauce (if using). Mix everything together and cook for another minute or so.

Step 5- Combine with Noodles:

– Add the cooked noodles to the pan. Toss everything together, making sure the noodles are well coated with the curry powder and sauces.
– Stir in the bean sprouts and cook for another 1-2 minutes, just until they are heated through.

Step 6- Finish and Serve:

– Drizzle the sesame oil over the noodles and give one last good toss.
– Season with salt and pepper to taste.
– Garnish with chopped scallions and cilantro, if desired.

Step 7- Serve Hot:

– Serve the Singapore Chow Mein hot, straight from the pan.
