– 8 oz (225 grams) spaghetti
– 1 lb (450 grams) large shrimp, peeled and deveined
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1/2 teaspoon red pepper flakes (optional, for heat)
– 1 cup cherry tomatoes, halved
– 1/4 cup white wine (or chicken broth)
– 1/4 cup fresh lemon juice (about 1 lemon)
– 1/4 cup chopped fresh parsley
– Salt and black pepper to taste
– Grated Parmesan cheese (optional, for serving)
– Cook the spaghetti according to package instructions until al dente. Drain and set aside.
– In a large skillet, heat the olive oil over medium heat.
– Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
– Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
– In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
– Pour in the white wine (or chicken broth) and lemon juice. Bring to a simmer and cook for about 2 minutes, allowing the sauce to reduce slightly.
– Return the cooked shrimp to the skillet and toss to coat with the sauce.
– Add the cooked spaghetti to the skillet and toss everything together until the pasta is well coated with the sauce.
– Stir in the chopped parsley and season with salt and black pepper to taste.
– Divide the shrimp spaghetti among plates.
