1.Ingredients

– 1 whole chicken (about 1.5 kg), skin removed and cleaned
– 1 cup plain yogurt
– 2 tablespoons ginger-garlic paste
– 1 tablespoon lemon juice
– 2 tablespoons tandoori masala (store-bought or homemade)
– 1 teaspoon Kashmiri red chili powder (for color, adjust to taste)
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– Salt to taste
– 2 tablespoons vegetable oil
– Fresh cilantro and lemon wedges for garnish

2.Instructions

Step 1- Marination:

– In a large bowl, mix yogurt, ginger-garlic paste, lemon juice, tandoori masala, Kashmiri red chili powder, ground cumin, ground coriander, turmeric powder, salt, and vegetable oil.
– Make deep cuts on the chicken pieces (legs, thighs, breasts) to allow the marinade to penetrate.
– Coat the chicken pieces evenly with the marinade, ensuring they are well-covered. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or preferably overnight.

Step 2- Preparation:

– Preheat your grill or oven to 200°C (400°F). If using a grill, preheat to medium-high heat.
– If grilling, lightly oil the grill grate. If using an oven, line a baking sheet with aluminum foil and place a wire rack on top.
– Arrange the marinated chicken pieces on the grill or wire rack, leaving space between each piece.
– Grill or bake the chicken for about 20-25 minutes, turning once halfway through cooking, or until the chicken is cooked through and juices run clear. The internal temperature should reach 75°C (165°F) for safe consumption.

Step 3- Serve:

– Remove the chicken from the grill or oven and let it rest for a few minutes.
– Garnish with fresh cilantro and lemon wedges.
– Serve hot with naan bread, mint chutney, and a side salad.
