Ingredients:
- 250g paneer (cottage cheese), cubed
- 2 tablespoons ghee or oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tomatoes, pureed
- 1/4 cup cashew nuts, soaked in warm water
- 1/2 cup heavy cream
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon red chili powder
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the Cashew Paste:
- . Drain the soaked cashew nuts and blend them into a smooth paste with a little water.
2. Cook the Paneer:
- Heat 1 tablespoon of ghee or oil in a pan.
- Add the paneer cubes and sauté until they are golden brown. Remove and set aside.
3. Prepare the Gravy:
- In the same pan, add the remaining ghee or oil.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the minced garlic and grated ginger, sauté for another minute.
- Add the tomato puree and cook until the oil separates from the mixture.
- Add turmeric powder, coriander powder, cumin powder, garam masala, red chili powder, and salt. Cook for 2-3 minutes.
- Stir in the cashew paste and cook for another 2 minutes.
- Add the heavy cream and mix well, cooking for an additional 2-3 minutes.
- Add the sautéed paneer cubes and simmer for 5-7 minutes, allowing the paneer to absorb the flavors.
4. Garnish and Serve:
- Garnish with chopped cilantro.
- Serve hot with naan.
