Prepare a hearty burrito by sautéing ground meat with onions, garlic, bell peppers, black beans, and corn. Mix with cooked rice and taco seasoning, then spoon onto warm tortillas. Add cheese and salsa, fold, and optionally grill for a crispy exterior. Serve with cilantro, lime wedges, and sour cream.
Ingredients:
For the Filling:
- 1 lb (450g) ground beef or chicken
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 2 tbsp taco seasoning (store-bought or homemade)
- 1 tbsp olive oil
- Salt and pepper, to taste
For the Burrito Wrap:
- Large flour tortillas (10-12 inches)
- 1 cup salsa or pico de gallo
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions:
1. Prepare the Filling:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and minced garlic; sauté until onions are translucent and garlic is fragrant.
- Add the ground beef or chicken. Cook until browned and cooked through, breaking it up with a spatula as it cooks.
- Stir in the chopped red bell pepper and cook for another 2-3 minutes until slightly tender.
- Add the black beans and corn. Stir to combine and cook for an additional 2 minutes.
- Mix in the cooked rice and taco seasoning. Adjust salt and pepper to taste. Cook for 2-3 minutes, allowing flavors to meld together.
- Remove from heat and set aside.
2. Warm the Tortillas:
- Heat the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable. You can also wrap them in a damp paper towel and microwave for 30-45 seconds.
3. Assemble the Burritos:
- Lay a warm tortilla flat on a clean surface.
- Spoon a generous amount of the filling mixture onto the center of the tortilla, leaving about 2 inches of space on each side.
- Sprinkle shredded cheese over the filling.
- Add a spoonful of salsa or pico de gallo on top of the cheese.
- Fold the sides of the tortilla over the filling, then roll from the bottom up to form a tight wrap.
4. Optional: Grill the Burritos:
- For a crispy exterior, place the assembled burritos seam-side down in a hot, lightly oiled skillet.
- Cook for 2-3 minutes on each side until golden brown and crispy.
5. Serve:
- Slice the burritos in half if desired.
- Garnish with chopped cilantro and serve with lime wedges, extra salsa, and sour cream or Greek yogurt on the side.
