Ingredients
For Dhuska:

- Garlic Cloves: 3–4
- Cumin Seeds: 1 tsp
- Turmeric Powder: ¼ tsp
- Salt: To taste
- Water: As needed
- Oil: For frying
Instructions
1. Soak and Grind Batter
- Rinse and soak rice and chana dal separately for 4–5 hours.
- Drain the water and transfer both to a blender. Add green chilies, garlic, cumin seeds, and a little water.
- Grind into a smooth, thick batter. The consistency should be slightly thicker than pancake batter.
2. Season the Batter
- Transfer the batter to a bowl. Add turmeric powder and salt.
- Mix well and let it rest for 10–15 minutes.
3. Heat Oil for Frying
- Heat oil in a deep frying pan or kadhai over medium heat. Ensure the oil is hot enough by dropping a small amount of batter—it should sizzle and rise.
4. Fry the Dhuska
- Take a ladle of batter and gently pour it into the hot oil. Spread it slightly to form a circular shape.
- Fry until golden brown on one side, then flip and cook the other side. Each Dhuska should take about 3–4 minutes.
5. Drain and Serve
- Remove the Dhuska using a slotted spoon and drain excess oil on paper towels.
- Repeat the process with the remaining batter.
