Ingredients:
– 1/2 cup Basmati rice
– 1 liter whole milk
– 1/2 cup sugar (adjust to taste)
– 1/4 cup condensed milk
– 1/4 cup chopped nuts (almonds, pistachios, cashews)
– 1/4 teaspoon cardamom powder
– A pinch of saffron strands (optional)
– 1 tablespoon ghee (clarified butter)
– Rose petals for garnish (optional)

Instructions:

1. Wash the Basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for about 30 minutes. Drain and set aside.

2. In a heavy-bottomed pan, heat ghee over medium heat. Add the soaked rice and sauté for a few minutes until it turns slightly golden and aromatic.

3. Pour the whole milk into the pan with the rice and bring it to a gentle boil. Stir occasionally to prevent the rice from sticking to the bottom of the pan.

4. Once the milk starts boiling, reduce the heat to low and let the rice cook in the milk, stirring occasionally. Allow it to simmer until the rice is soft and the milk has thickened, which may take about 30-40 minutes.

5. As the kheer thickens, add sugar and condensed milk. Stir well to combine and let it simmer for another 10-15 minutes until the desired consistency is reached. Remember to adjust the sweetness according to your preference.

6. Add cardamom powder and saffron strands (if using) to the kheer, giving it a delightful aroma and flavor. Mix well and turn off the heat.

7. Allow the kheer to cool down for a few minutes before transferring it to a serving bowl or individual serving cups.

8. Garnish the Rice Kheer Pudding with chopped nuts and rose petals for a festive touch.

9. Refrigerate the kheer for at least an hour before serving to enhance the flavors. It can be served chilled or at room temperature, depending on your preference.
