Ingredients:
- 8 oz (225 g) pasta (such as fettuccine, penne, or spaghetti)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 1/2 cup heavy cream or a plant-based alternative for a vegan option
- 1/2 cup grated Parmesan cheese (optional for a vegan option, use nutritional yeast or a vegan cheese)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish)
- Optional: red pepper flakes for a bit of heat
Instructions:
1. Cook Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
2. Prepare Sauce:
- Saute Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent, about 3-4 minutes.
- Add Tomatoes: Stir in the diced tomatoes and Italian seasoning. Cook for about 5-7 minutes, allowing the tomatoes to break down and the flavors to meld together.
3. Make it Creamy:
- Add Cream: Reduce the heat to low and stir in the heavy cream. Simmer gently for another 2-3 minutes.
- Cheesy Option: If using Parmesan cheese, stir it in now until melted and well combined. For a vegan option, add nutritional yeast or vegan cheese.
4. Combine Pasta and Sauce:
- Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce. Season with salt and pepper to taste. If you like a bit of heat, sprinkle in some red pepper flakes.
5. Serve:
- Transfer the pasta to serving plates or a large serving bowl. Garnish with freshly chopped basil or parsley.
