This pasta recipe that promises all those yummy tastes you relish at your favorite restaurant. It’s versatile and you can tweak it to suit your taste buds or dietary needs by simply tossing in proteins of your choice.

Ingredients:

  • 8 oz (225 g) pasta (such as fettuccine, penne, or spaghetti)
  •  2 tablespoons olive oil
  •  3 cloves garlic, minced
  • 1 small onion, finely chopped
  •  1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
  •  1/2 cup heavy cream or a plant-based alternative for a vegan option
  •  1/2 cup grated Parmesan cheese (optional for a vegan option, use nutritional yeast or a vegan cheese)
  •  1 teaspoon Italian seasoning
  •  Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Optional: red pepper flakes for a bit of heat

 Instructions:

1. Cook Pasta:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

2. Prepare Sauce:

  • Saute Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent, about 3-4 minutes.
  • Add Tomatoes: Stir in the diced tomatoes and Italian seasoning. Cook for about 5-7 minutes, allowing the tomatoes to break down and the flavors to meld together.

3. Make it Creamy:

  • Add Cream: Reduce the heat to low and stir in the heavy cream. Simmer gently for another 2-3 minutes.
  • Cheesy Option: If using Parmesan cheese, stir it in now until melted and well combined. For a vegan option, add nutritional yeast or vegan cheese.

4. Combine Pasta and Sauce:

  • Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the sauce. Season with salt and pepper to taste. If you like a bit of heat, sprinkle in some red pepper flakes.

5. Serve:

  • Transfer the pasta to serving plates or a large serving bowl. Garnish with freshly chopped basil or parsley.

6. Enjoy:
