Here’s a Simple Recipe to Make Vada Pav At Home
Vada pav is a popular street food in Maharashtra, India. It consists of a spicy potato fritter (vada) served inside a bun (pav), usually accompanied by various chutneys and sometimes fried green chilies.

In the bustling streets of Mumbai, amidst the chaotic rhythm of life, there exists a culinary gem that has captured the hearts and palates of millions: the humble vada pav. This quintessential street food, often referred to as the “poor man’s burger,” is a delightful amalgamation of flavors and textures that embodies the essence of Indian street food culture. Let’s embark on a gastronomic journey to unravel the irresistible charm of vada pav.
Instructions:
– 4 medium-sized potatoes, boiled and mashed
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 tablespoon ginger-garlic paste
– 2-3 green chilies, finely chopped
– A handful of curry leaves, chopped
– 1/2 teaspoon turmeric powder
– Salt to taste
– 1 tablespoon lemon juice
– 1/4 cup chopped coriander leaves
– 4-6 pav (soft dinner rolls)
– Green chutney
– Tamarind chutney
– Garlic chutney (optional)
– Oil for frying
Step 1. Heat oil in a pan. Add mustard seeds and let them splutter. Then add cumin seeds.
Step 2. Add ginger-garlic paste, green chilies, and chopped curry leaves. Sauté for a minute.
Step 3. Add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes.
Step 4. Season with salt and lemon juice. Add chopped coriander leaves and mix. Remove from heat and let it cool.
Step 5. Divide the potato mixture into equal portions and shape them into round balls. Flatten them slightly to form patties.
Step 6. Heat oil in a frying pan. Once the oil is hot, gently slide in the potato patties and fry until they turn golden brown and crispy. Remove and drain excess oil on paper towels.
Step 7. Slit the pav horizontally without cutting it into two pieces completely.
Step 8. Spread some green chutney on one side and tamarind chutney on the other .
Step 9. Place a potato patty between the pav slices and press gently.
Step 10. Serve hot with more chutney on the side.
