1.Ingredients

  • 1 cup fine semolina (rava/sooji)
  • 1/2 cup yogurt (curd), preferably sour
  • 1/2 cup water (adjust consistency as needed)
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1 tablespoon chopped cilantro (coriander leaves)
  • Salt to taste
  • 1/2 teaspoon baking soda (optional)
  • Oil or ghee for cooking

2.Instructions

Step1-Prepare the Batter

  • In a mixing bowl, combine the semolina (rava) and yogurt. Mix well.
  • Add water gradually to form a smooth batter. The consistency should be thicker than dosa batter but pourable. Let it rest for 15-20 minutes.

Step 2-Prepare the Toppings

  • Meanwhile, chop the onion, tomato, green chilies, and cilantro. Keep them ready for topping the uttapams.

Step3-Season the Batter

  • After resting, check the batter consistency. It should have slightly thickened. Add salt to taste and mix well. If using, add baking soda and mix gently.

Step4-Make Uttapams

  • Pour a ladleful of batter onto the hot griddle and spread it gently into a circle using the back of the ladle. It should be thicker than a regular dosa.
  • Immediately sprinkle chopped onions, tomatoes, green chilies, and cilantro over the top of the uttapam.

Step 5-Cooking:

  • Drizzle a little oil or ghee around the edges and on top. Cook on medium heat until the bottom turns golden brown and crisp, and the top surface dries out slightly.

Step 6-Flip and Cook:

  • Carefully flip the uttapam using a spatula and cook the other side until it turns golden brown and cooked through. Press gently with the spatula to ensure even cooking.

Step 7-Serve:

  • Once both sides are cooked and crisp, transfer the uttapam to a plate. Repeat the process with the remaining batter and toppings.
