Here’s a delicious recipe for Rasmalai fudge that combines the flavors of the classic Indian sweet with a fudgy texture!
– 1 cup condensed milk
– 1 cup milk powder
– 1/2 cup unsweetened coconut (optional)
– 1/4 cup ghee (clarified butter)
– 1/2 teaspoon cardamom powder
– A pinch of saffron strands (optional)
– Chopped nuts (pistachios and almonds) for garnish
– 1/2 cup milk
– 2 tablespoons sugar
– 1/4 teaspoon cardamom powder
– A few saffron strands (soaked in warm milk)
– In a small saucepan, heat the milk and sugar until the sugar dissolves.
– Add cardamom powder and saffron. Mix well and set aside to cool.
– In a non-stick pan, melt ghee over low heat.
– Add condensed milk, milk powder, and coconut (if using). Mix well.
– Stir continuously until the mixture thickens and starts to leave the sides of the pan, about 8-10 minutes.
– Add the cardamom powder and the prepared rasmalai essence. Mix until well combined.
– Grease a square or rectangular dish with ghee.
– Pour the fudge mixture into the dish, spreading it evenly.
– Garnish with chopped nuts and a few saffron strands.
– Allow it to cool at room temperature, then refrigerate for about 2 hours to set.
– Once set, cut the fudge into squares or rectangles.
– Serve chilled or at room temperature.
