– Ragi flour (finger millet flour) – 1 cup
– Whole wheat flour – 1/2 cup
– Salt – 1/4 tsp
– Warm water – as needed
– Finely chopped cabbage – 1 cup
– Finely chopped carrots – 1/2 cup
– Finely chopped mushrooms – 1/2 cup (optional, can replace with more veggies)
– Finely chopped onions – 1/2 cup
– Finely chopped garlic – 2 cloves
– Ginger, grated – 1 tsp
– Soy sauce – 1 tbsp
– Salt – to taste
– Black pepper – 1/2 tsp
– Chopped coriander leaves – 2 tbsp
– Oil – 1 tsp (for cooking the filling)
– Vegetable or chicken broth – 4 cups
– Soy sauce – 2 tbsp
– Ginger, finely grated – 1 tsp
– Garlic, minced – 2 cloves
– Chili flakes – 1/2 tsp (optional, for heat)
– Salt – to taste
– Chopped spring onions or coriander – for garnish
– In a mixing bowl, combine ragi flour, whole wheat flour, and salt.
– Gradually add warm water and knead to form a smooth, elastic dough.
– Cover the dough with a damp cloth and let it rest for at least 30 minutes.
– Heat oil in a pan over medium heat.
– Add garlic, ginger, and onions, and sauté until onions are translucent.
– Add chopped vegetables and stir-fry until they are tender and any excess moisture evaporates.
– Stir in soy sauce, salt, and black pepper. Cook for a few more minutes.
– Remove from heat and mix in chopped coriander leaves. Let the filling cool.
– Divide the dough into small balls and roll each into a thin circle.
– Place a spoonful of the filling in the center of each circle.
– Fold the edges to seal the filling inside, pinching the top to form a pleated, closed dumpling.
– Place the momos in a steamer basket lined with parchment paper.
– Steam for about 10-15 minutes, or until the dough is cooked through and translucent.
– In a pot, combine the broth, soy sauce, ginger, garlic, and chili flakes (if using).
– Bring to a simmer and cook for 5-10 minutes to blend the flavors.
– Adjust seasoning with salt if needed.
– Serve the steamed momos in bowls with hot jhol (broth) poured over them.
– Garnish with chopped spring onions or coriander.
