Salman Khan’s instant onion pickle is a quick and flavorful condiment. It involves thinly slicing onions and mixing them with turmeric, red chili powder, asafoetida, salt, and optional sugar. Toasted mustard and fenugreek seeds are added along with lemon juice or vinegar. The mixture is tossed and allowed to marinate for 30 minutes to an hour. The pickle can be stored in an airtight container in the refrigerator for up to two weeks. It’s perfect for adding a tangy, spicy kick to meal

Ingredients:

  • 3 large onions, thinly sliced
  • 1 tablespoon mustard seeds
  • 1 tablespoon fenugreek seeds
  •  1 tablespoon turmeric powder
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 teaspoon asafoetida (hing)
  • 1 tablespoon salt (adjust to taste)
  • 1 tablespoon sugar (optional, for a touch of sweetness)
  • 1/2 cup lemon juice or vinegar
  •  2 tablespoons vegetable oil or mustard oil
  • Fresh coriander or curry leaves for garnish (optional)

Instructions:

Step 1: Prepare the Onions

1. Slice Onions:

  • Peel and thinly slice the onions. Place them in a large bowl.

Step 2: Toast the Seeds

1. Heat Oil:

  • In a small pan, heat the vegetable or mustard oil on medium flame.

2. Toast Seeds:

  • Add mustard seeds and fenugreek seeds. Toast them until they start to crackle and become aromatic. Remove from heat.

Step 3: Mix Spices

1. Combine Spices:

  • In a small bowl, mix the turmeric powder, red chili powder, asafoetida, salt, and sugar (if using).

Step 4: Combine Ingredients

1. Add Spices to Onions:

  • Sprinkle the spice mixture over the sliced onions. Toss the onions gently to ensure they are evenly coated with the spices.

2. Add Lemon Juice:

  • Pour the lemon juice or vinegar over the spiced onions. Mix well.

Step 5: Add Toasted Seeds

1. Combine with Oil:

  • Pour the toasted mustard and fenugreek seeds along with the hot oil over the onions. Mix thoroughly.

Step 6: Allow to Marinate

1. Marinate:

  • Let the pickle sit for at least 30 minutes to an hour to allow the flavors to meld. The onions will soften and absorb the spices and acidity.

Step 7: Store and Serve

1. Store:

  • Transfer the pickle to a clean, airtight jar or container. It can be stored in the refrigerator for up to 2 weeks.

2. Serve:

  • Serve the instant onion pickle as a tangy, spicy condiment with your meals.
