Quesadillas are a popular Mexican dish, often enjoyed as a quick and satisfying meal or snack, served in wedges for easy eating. Here’s a simple recipe for quesadillas:
– 4 large flour tortillas
– 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
– 1 cup cooked and shredded chicken (optional)
– 1/2 cup chopped bell peppers (any color)
– 1/2 cup chopped onion
– 1/2 cup canned black beans, drained and rinsed (optional)
– 1/2 cup corn kernels (fresh, canned, or frozen)
– 1 teaspoon ground cumin
– 1/2 teaspoon chili powder
– Salt and pepper to taste
– Olive oil or cooking spray
Optional toppings:
– Salsa
– Guacamole
– Sour cream
– Chopped cilantro
– Sliced jalapeños
– In a skillet, heat a bit of olive oil over medium heat. Add chopped onions and bell peppers. Cook until softened, about 3-4 minutes.
– Add black beans and corn kernels to the skillet. Stir in ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until heated through. Remove from heat and set aside.
– Heat a large skillet or griddle over medium heat. Lightly grease with olive oil or cooking spray.
– Place one flour tortilla on the skillet. Sprinkle a layer of shredded cheese evenly over the tortilla.
– Add a portion of the cooked chicken (if using) and then spoon some of the vegetable mixture over the cheese.
– Top with another layer of shredded cheese. Place another tortilla on top to cover the filling.
– Cook the quesadilla for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
– Remove the quesadilla from the skillet and let it cool slightly before cutting into wedges.
– Serve warm with salsa, guacamole, sour cream, chopped cilantro, and sliced jalapeños as desired.
