1. Ingredients

– 4 medium potatoes, peeled and diced
– 2 tablespoons oil (vegetable or mustard)
– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds (optional)
– 1 onion, finely chopped
– 1-2 green chilies, finely chopped (adjust to taste)
– 1 teaspoon ginger-garlic paste
– 1 tomato, finely chopped
– 1/2 teaspoon turmeric powder
– 1 teaspoon ground coriander
– 1 teaspoon cumin powder
– 1/2 teaspoon red chili powder (adjust to taste)
– 1 teaspoon garam masala
– Salt to taste
– 1/2 cup water (adjust for desired consistency)
– Fresh cilantro (coriander) leaves, chopped for garnish

2. Instructions

1. Prepare the Potatoes:

Peel and dice the potatoes into small cubes. Rinse them in water and set aside.

2. Heat Oil:

In a pan, heat the oil over medium heat. Add cumin seeds and mustard seeds (if using). Let them splutter.

3. Sauté Aromatics:

Add the finely chopped onion and green chilies to the pan. Sauté until the onions become translucent and slightly golden.

4. Add Ginger-Garlic Paste:

Stir in the ginger-garlic paste and cook for a minute until the raw smell disappears.

5. Cook Tomatoes:

Add the chopped tomato and cook until it becomes soft and oil starts to separate from the masala.
