A parfait is a versatile and delicious dish that can be tailored to your taste and preferences. Here’s a basic recipe for a classic fruit and yogurt parfait that’s easy to make and perfect for breakfast or a light dessert:

1. Ingredients

For the Parfait:

– 2 cups Greek yogurt (plain or vanilla)
– 2-3 tbsp honey or maple syrup (optional, for sweetness)
– 1 cup granola
– 1 cup fresh fruit (such as berries, sliced bananas, or diced apples)
– Fresh mint leaves for garnish (optional)

For Homemade Granola (optional):

– 2 cups old-fashioned oats
– 1/2 cup nuts (such as almonds, walnuts, or pecans), chopped
– 1/4 cup honey or maple syrup
– 1/4 cup coconut oil or melted butter
– 1/2 tsp vanilla extract
– 1/2 tsp ground cinnamon
– A pinch of salt
– 1/2 cup dried fruit (such as raisins, cranberries, or apricots), optional

2. Instructions

Step 1- Prepare the Granola (if making from scratch):

1. Preheat your oven to 350°F (175°C).
2. In a large bowl, mix the oats, chopped nuts, cinnamon, and salt.
3. In a small bowl, combine the honey or maple syrup, coconut oil or melted butter, and vanilla extract.
4. Pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
5. Spread the mixture in an even layer on a baking sheet lined with parchment paper.
6. Bake for 15-20 minutes, stirring halfway through, until the granola is golden brown and fragrant.
7. Let the granola cool completely before mixing in dried fruit, if using. Store in an airtight container.

Step 2- Assemble the Parfait:

1. If you like your yogurt sweetened, stir in the honey or maple syrup into the Greek yogurt.
2. In serving glasses or bowls, start with a layer of yogurt.
3. Add a layer of granola on top of the yogurt.
4. Add a layer of fresh fruit on top of the granola.
5. Repeat the layers until the glasses or bowls are filled, finishing with a dollop of yogurt and a sprinkle of granola on top.
6. Garnish with fresh mint leaves if desired.

Step 3- Serve:

– Serve immediately for a crunchy granola texture or refrigerate for up to 1-2 hours if you prefer a slightly softened granola.
