To make Pad Thai wrapped in an egg net, start by preparing the Pad Thai sauce with fish sauce, tamarind, and palm sugar. Stir-fry garlic, shallots, shrimp (or tofu), and egg with soaked rice noodles, then toss with the sauce and add bean sprouts, peanuts, and chives. For the egg net, beat eggs with water and drizzle into a hot pan in a crisscross pattern to create a thin lace-like net. Place the Pad Thai in the center of the egg net and fold the edges over to form a parcel. Serve with garnishes like chives, peanuts, and lime wedges. This elegant dish balances sweet, sour, salty, and umami flavors.

Ingredients:

 For Pad Thai:

  • 200g rice noodle (soaked in warm water for 30 minutes, then drained)
  • 200g shrimp (peeled and deveined, or substitute with chicken or tofu)
  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 2 shallots (finely sliced)
  • 1 egg (beaten)
  • 100g bean sprouts
  • 50g firm tofu (cubed and lightly fried)
  • 2 tbsp roasted peanuts (crushed)
  • 2 tbsp dried shrimp (optional)
  • 2 tbsp fish sauce
  • 1 tbsp tamarind paste  (mixed with 2 tbsp warm water)
  • 1 tbsp palm sugar (or brown sugar)
  • 1 tbsp soy sauce
  • 1-2 tbsp chili flakes (optional, adjust to taste)
  • 2 tbsp chopped chives(or spring onions)
  • 1 lime (cut into wedges for garnish)

 For Egg Net:

  • 2 eggs (beaten)
  • 1 tbsp water
  • Pinch of salt
  • Vegetable oil (for frying)

Instructions:

 Step 1: Prepare the Pad Thai Sauce

1. Mix the Sauce Ingredients:

  • In a small bowl, combine fish sauce, tamarind paste, palm sugar, and soy sauce. Stir until the sugar dissolves. Adjust the taste as needed—more tamarind for sourness, more sugar for sweetness, or more fish sauce for saltiness. Set aside.

Step 2: Cook the Pad Thai

1. Stir-Fry the Aromatics:

  • Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and sliced shallots. Stir-fry for about 1-2 minutes until fragrant and golden.

2. Cook the Shrimp and Tofu:

  • Add the shrimp (or chicken/tofu) to the wok and cook until the shrimp turns pink and opaque (or until the chicken is cooked through), about 2-3 minutes. Push the shrimp and tofu to the side of the wok.

3. Add the Egg:

  • Pour the beaten egg into the empty space in the wok. Let it set for a few seconds, then scramble it gently.

4. Add the Noodles:

  • Add the soaked and drained rice noodles to the wok. Stir-fry everything together, making sure the noodles are evenly coated with the egg and other ingredients.

5. Add the Sauce:

  • Pour the prepared Pad Thai sauce over the noodles. Toss everything together to ensure the noodles are fully coated with the sauce.

6. Add the Vegetables and Peanuts:

  • Toss in the bean sprouts, crushed peanuts, and dried shrimp (if using). Stir-fry for another 2-3 minutes until everything is well combined and heated through.

7. Finish with Chives and Chili Flakes :

  • Add the chopped chives and chili flakes (if using). Give everything a final toss, then remove the wok from heat.

Step 3: Prepare the Egg Net

1. Beat the Eggs :

  • In a bowl, whisk the eggs with 1 tablespoon of water and a pinch of salt until well combined.

2. Create the Egg Net:

  • Heat a non-stick skillet over medium heat and lightly grease it with vegetable oil. Pour the beaten eggs into a squeeze bottle or use a fork to drizzle the egg mixture into the pan. Move the bottle or fork back and forth quickly in a crisscross pattern to create a thin, lace-like “net” of egg in the skillet.

3. Cook the Egg Net:

  • Let the egg net cook for about 1-2 minutes until it is set but not browned. Carefully lift the edges and transfer the egg net to a plate.

Step 4: Assemble the Dish

1. Wrap the Pad Thai :

  • Place a portion of the cooked Pad Thai in the center of the egg net. Gently fold the edges of the egg net over the Pad Thai to create a neat parcel.

2. Serve :

  • Carefully transfer the wrapped Pad Thai to a serving plate. Garnish with extra chives, crushed peanuts, and lime wedges. Serve immediately with additional chili flakes, fish sauce, and lime wedges on the side.
