Here’s a 7 step recipe for spicy potato noodles:
– 2 large potatoes, peeled and julienned or grated
– 200 grams noodles (any type you prefer)
– 2 tablespoons oil (vegetable or olive oil)
– 1 onion, thinly sliced
– 2-3 garlic cloves, minced
– 1-2 green chilies, chopped (adjust to taste)
– 1 bell pepper, sliced (optional)
– 2 tablespoons soy sauce
– 1 tablespoon chili sauce (adjust to taste)
– 1 teaspoon chili powder (optional)
– Salt to taste
– Fresh coriander leaves for garnish
– Boil water in a pot, add salt, and cook the noodles according to package instructions. Drain and set aside.
– In a bowl, soak the julienned potatoes in water for about 10 minutes to reduce excess starch. Drain and pat dry with a towel.
– Heat oil in a large pan or wok over medium heat. Add sliced onions and sauté until translucent. Then, add minced garlic and green chilies, cooking for another minute until fragrant.
– Add the julienned potatoes to the pan, stirring well. Cook for about 5-7 minutes, or until the potatoes are tender and slightly crispy. If using bell peppers, add them now and cook for another 2-3 minutes.
– Add the cooked noodles to the pan. Pour in the soy sauce, chili sauce, and chili powder (if using). Toss everything together until well combined and heated through.
– Taste and adjust seasoning with salt, if needed. Remove from heat and garnish with fresh coriander leaves.
– Serve the spicy potato noodles hot as a main dish or a side. Enjoy your flavorful creation!
