Here’s a simple and delicious recipe for no-bake peanut oat cups:
– 1 cup old-fashioned oats
– 1/2 cup natural peanut butter (smooth or crunchy)
– 1/4 cup honey or maple syrup
– 1/4 cup mini chocolate chips (optional)
– 1/4 cup chopped nuts or seeds (optional)
– 1/2 tsp vanilla extract (optional)
– In a microwave-safe bowl, combine the peanut butter and honey. Microwave for 20-30 seconds until melted and easily stirrable. Stir in the vanilla extract, if using.
– In a large bowl, mix the oats with the melted peanut butter and honey mixture until well combined. Stir in chocolate chips and/or nuts or seeds if desired.
– Line a mini muffin tin or silicone muffin cups with parchment paper or lightly grease them. Press the mixture firmly into each cup, packing it down with the back of a spoon.
– Refrigerate for at least 30 minutes, or until the cups are set and firm.
– Once set, remove the cups from the molds and enjoy. Store in an airtight container in the refrigerator for up to a week.
