– 1 cup pitted dates
– 1 cup walnuts (or almonds, or a mix)
– 1/4 cup unsweetened cocoa powder
– 1/4 cup almond butter (or any nut butter of your choice)
– 1/4 cup mini chocolate chips (optional, for extra chocolatey goodness)
– 1/2 teaspoon vanilla extract
– A pinch of salt
– If your dates are not soft, soak them in warm water for about 10 minutes, then drain and pat dry.
– In a food processor, pulse the walnuts until they are finely chopped but not ground into a powder.
– Add the pitted dates, cocoa powder, almond butter, vanilla extract, and a pinch of salt to the food processor.
– Blend until the mixture is well combined and starts to stick together. You may need to stop and scrape down the sides of the bowl occasionally.
– If using mini chocolate chips, pulse them into the mixture until evenly distributed.
– Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands.
– Place the brownie bites on a baking sheet or plate lined with parchment paper.
– Refrigerate for at least 30 minutes to firm up.
