To make Navrattan Korma, start by preparing a smooth masala paste with onion, yogurt, coconut, ginger-garlic, and green chilies. Cook mixed vegetables and spices, then add the masala paste and simmer until vegetables are tender. Incorporate milk or cream for richness and add fried dry fruits for texture. Garnish with fresh coriander and serve hot with naan or rice.
Ingredients:
Mixed Vegetables:
- 1 cup carrots (diced)
- 1 cup beans (chopped)
- 1 cup potatoes (diced)
- 1 cup peas
- 1/2 cup cauliflower florets
Dry Fruits:
- 1/4 cup cashew nuts
- 1/4 cup almonds
- 1/4 cup raisins
For Masala Paste:
- 1 large onion (finely chopped)
- 1/2 cup yogurt
- 1/4 cup grated coconut
- 1 tbsp ginger-garlic paste
- 2 green chilies (chopped)
Spices:
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder (adjust to taste)
- Salt to taste
Others:
- 2 tbsp ghee or oil
- 1/2 cup milk or cream
- Fresh coriander leaves (for garnish)
Instructions:
1. Prepare the Masala Paste:
- In a blender, combine the chopped onion, yogurt, grated coconut, ginger-garlic paste, and green chilies. Blend into a smooth paste. Set aside.
2. Fry Dry Fruits:
- Heat 1 tablespoon of ghee or oil in a pan. Add the cashew nuts, almonds, and raisins. Fry until golden brown and fragrant. Remove and set aside.
3. Cook Vegetables:
- In the same pan, add another tablespoon of ghee or oil. Add cumin seeds and let them splutter. Add diced carrots, beans, potatoes, peas, and cauliflower. Sauté for a few minutes until slightly tender.
4. Add Masala Paste:
- Stir in the prepared masala paste. Cook on medium heat for about 5-7 minutes until the paste starts to release oil and becomes aromatic.
5. Add Spices:
- Mix in the coriander powder, turmeric powder, garam masala, red chili powder, and salt. Cook for another 2-3 minutes, allowing the spices to blend well with the vegetables.
6. Simmer:
- Add enough water to cover the vegetables. Bring to a boil, then reduce heat and let it simmer until the vegetables are cooked through and the curry has thickened.
7. Add Cream and Dry Fruits:
- Stir in the milk or cream for a creamy texture. Add the fried dry fruits and mix well. Adjust seasoning as needed.
8. Garnish and Serve:
- Garnish with fresh coriander leaves. Serve hot with naan, roti, or rice.
