Navratri Special Recipe Of Aloo Kadhi
Aloo Kadhi is a traditional Indian dish prepared with potatoes and a tangy yogurt-based gravy, infused with aromatic spices. It offers a harmonious balance of flavors and textures, making it a favorite among both fasting and non-fasting individuals during Navratri.
Ingredients:
– 2 medium-sized potatoes, peeled and diced
– 1 cup yogurt (preferably sour)
– 2 tablespoons chickpea flour (besan)
– 2 cups water
– 1 tablespoon ghee or vegetable oil
– 1 teaspoon cumin seeds
– 1 teaspoon ginger, grated
– 1 green chili, finely chopped
– ½ teaspoon turmeric powder
– 1 teaspoon coriander powder
– ½ teaspoon red chili powder (adjust to taste)
– 1 teaspoon rock salt (sendha namak, for fasting)
– 2-3 curry leaves
– Fresh coriander leaves, chopped, for garnish
Step 1. Prepare the Yogurt Mixture:
– Add chickpea flour (besan) to the yogurt and mix well to make a lump-free paste.
Step 2. Cook the Potatoes:
– Heat ghee in a pan .
– Add diced potatoes and fry until they are golden brown and cooked through.
Step 3. Prepare the Kadhi:
– Add cumin seeds and let them splutter.
– Add grated ginger and chopped green chili. Sauté for a minute.
– Lower the heat and slowly pour the yogurt and besan mixture into the pan while continuously stirring to avoid lumps.
– Add water gradually.
– Stir in turmeric powder, coriander powder, red chili powder, rock salt, and curry leaves.
Step 4. Cooking Aloo Kadhi:
– Bring the kadhi to a gentle simmer and let it cook for about 8-10 minutes, stirring occasionally. This will allow the flavors to meld together and the besan to cook through.
– Once the kadhi thickens slightly and reaches a smooth consistency, add the fried potatoes. Stir gently to combine.
– Let the kadhi simmer for another 5 minutes, allowing the potatoes to absorb the flavors of the kadhi.
Step 5. Serve:
– Garnish the Aloo Kadhi with freshly chopped coriander leaves.
– Serve hot with Navratri-special Kuttu ki Roti or Samak Rice.
