For the Chicken:
– 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
– 2 tablespoons cornstarch
– 2 tablespoons vegetable oil
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 1 tablespoon minced garlic
– 1 tablespoon minced ginger
– 1 tablespoon rice vinegar (optional)
– 1 tablespoon sesame oil
– 1/4 teaspoon red pepper flakes (optional)
– Green onions, chopped
– Sesame seeds (optional)
– In a bowl, toss the chicken pieces with cornstarch until evenly coated. This will help give the chicken a crispy texture.
– In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
– In the same skillet, add garlic and ginger, and sauté for about 30 seconds until fragrant.
– Pour in the soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Stir until the sugar is dissolved and the sauce is heated through.
– Return the cooked chicken to the skillet and toss to coat in the sauce. Cook for another 2-3 minutes until the chicken is well-coated and heated through.
– Garnish with chopped green onions and sesame seeds if desired. Serve hot over rice or noodles.
