– 1 lb (450g) ground beef (or ground chicken, pork, or a mix)
– 1 tbsp olive oil
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 packet taco seasoning mix (or use homemade seasoning: 1 tsp chili powder, 1/2 tsp paprika, 1/2 tsp cumin, 1/4 tsp oregano, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp salt, and a pinch of cayenne pepper)
– 1/2 cup tomato sauce (or salsa)
– 12 small taco tortillas (corn or flour)
– 1 cup shredded lettuce
– 1 cup diced tomatoes
– 1 cup shredded cheddar or Mexican blend cheese
– 1/2 cup sour cream
– 1/4 cup chopped fresh cilantro
– Lime wedges, for serving
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute.
Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat if necessary.
Stir in the taco seasoning mix (or homemade seasoning) and tomato sauce. Simmer for 5 minutes, allowing the flavors to meld and the sauce to thicken. Adjust seasoning with salt and pepper if needed.
While the meat is simmering, warm the taco tortillas. You can do this by heating them in a dry skillet over medium heat for about 30 seconds on each side, or by wrapping them in foil and heating in a preheated oven at 350°F (175°C) for 10 minutes.
Spoon the seasoned meat into the warm tortillas. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
Garnish with chopped cilantro and serve with lime wedges on the side for squeezing over the tacos.
