Methi Chilla is a healthy Indian savory pancake prepared with besan (gram flour) and fresh methi leaves. The batter is seasoned with spices like ajwain, turmeric, and green chilies for added flavor. Ingredients:
- Besan (Gram Flour): 1 cup
- Fresh Methi Leaves (Fenugreek): 1 cup, finely chopped
- Green Chillies: 1-2, finely chopped
- Ginger: 1-inch piece, grated
- Garlic (optional): 2-3 cloves, minced
- Red Chilli Powder: ½ teaspoon
- Turmeric Powder: ¼ teaspoon
- Ajwain (Carom Seeds): ½ teaspoon
- Salt: As per taste
- Water: 1 cup (adjust for consistency)
- Cooking Oil: 2-3 tablespoons
Instructions:
- Prepare the Batter:
- In a mixing bowl, add 1 cup of besan.
- Gradually add water while whisking to avoid lumps. You need a smooth, flowing batter.
- Add Flavors:
- To the batter, mix finely chopped methi leaves, green chillies, ginger, garlic, turmeric powder, red chilli powder, ajwain, and salt. Combine well.
- Rest the Batter:
- Let the batter rest for about 10 minutes to enhance flavors and soften the methi leaves.
- Cook the Chillas:
- Heat a non-stick tawa or skillet on medium flame and lightly grease it with oil.
- Pour a ladleful of batter onto the center and spread it in a circular motion to form a thin pancake (like dosa).
- Drizzle a little oil around the edges and cook for 2-3 minutes until golden on one side.
- Flip the chilla carefully and cook the other side for another 1-2 minutes.
- Serve Hot:
- Serve the methi chillas warm with green chutney, curd, or tomato ketchup.
Tips:
- Adjust water to maintain a pourable yet thick consistency for the batter.
- Avoid making the batter too runny; this will make spreading difficult.
- You can also add chopped onions or grated carrots for extra flavor and nutrition.
