Methi Chilla is a delicious and healthy Indian pancake made using besan  and finely chopped fresh methi  leaves. The batter is seasoned with ajwain, turmeric, green chilies, and ginger to enhance its flavor. After resting the batter, it is spread on a hot tawa and cooked until golden brown and crispy on both sides. This protein-packed dish is nutritious and easy to prepare, ideal for breakfast or evening snacks. Serve methi chilla hot with green chutney, curd, or ketchup for a wholesome and tasty meal option.

Ingredients:

  • Besan (Gram Flour): 1 cup
  • Fresh Methi Leaves (Fenugreek): 1 cup, finely chopped
  • Green Chillies: 1-2, finely chopped
  • Ginger: 1-inch piece, grated
  • Garlic (optional): 2-3 cloves, minced
  • Red Chilli Powder: ½ teaspoon
  • Turmeric Powder: ¼ teaspoon
  • Ajwain (Carom Seeds): ½ teaspoon
  • Salt: As per taste
  • Water: 1 cup (adjust for consistency)
  • Cooking Oil: 2-3 tablespoons

Instructions:

  • Prepare the Batter:
    • In a mixing bowl, add 1 cup of besan.
    • Gradually add water while whisking to avoid lumps. You need a smooth, flowing batter.
  • Add Flavors:
    • To the batter, mix finely chopped methi leaves, green chillies, ginger, garlic, turmeric powder, red chilli powder, ajwain, and salt. Combine well.
  • Rest the Batter:
    • Let the batter rest for about 10 minutes to enhance flavors and soften the methi leaves.
  • Cook the Chillas:
    • Heat a non-stick tawa or skillet on medium flame and lightly grease it with oil.
    • Pour a ladleful of batter onto the center and spread it in a circular motion to form a thin pancake (like dosa).
    • Drizzle a little oil around the edges and cook for 2-3 minutes until golden on one side.
    • Flip the chilla carefully and cook the other side for another 1-2 minutes.
  • Serve Hot:
    • Serve the methi chillas warm with green chutney, curd, or tomato ketchup.

Tips:

  • Adjust water to maintain a pourable yet thick consistency for the batter.
  • Avoid making the batter too runny; this will make spreading difficult.
  • You can also add chopped onions or grated carrots for extra flavor and nutrition.
