– 1 lb (450g) chicken breast or thighs, boneless and skinless, cut into bite-sized pieces
– 1 large ripe mango, peeled, pitted, and cubed
– 1 tablespoon vegetable oil or olive oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1-inch piece of ginger, minced
– 1 bell pepper, diced (optional)
– 1 tablespoon soy sauce
– 1 tablespoon hoisin sauce (optional, for extra depth of flavor)
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili flakes (adjust to taste)
– Salt and black pepper to taste
– 1 tablespoon lime juice (or lemon juice)
– Fresh cilantro for garnish (optional)
– Heat the oil in a large skillet or wok over medium heat.
– Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
– In the same skillet, add a little more oil if needed. Sauté the chopped onion until it becomes translucent.
– Add the minced garlic and ginger, and cook for another minute until fragrant.
– Stir in the cumin, coriander, turmeric, and red chili flakes. Cook for about 30 seconds to release the flavors.
– Add the diced mango to the skillet. Cook for 2-3 minutes, allowing the mango to soften and blend with the spices.

– Add soy sauce and hoisin sauce (if using). Mix well and cook for an additional 3-4 minutes, allowing the flavors to meld together.
