Here’s a classic recipe for Malva pudding, a deliciously sweet and spongy South African dessert:
– 1 cup all-purpose flour
– 1 cup sugar
– 1 tablespoon baking powder
– 1/4 teaspoon salt
– 1 large egg
– 1 tablespoon apricot jam
– 1 teaspoon vanilla extract
– 1 cup milk
– 2 tablespoons melted butter or margarine
– 1 cup heavy cream
– 1/2 cup milk
– 1/2 cup sugar
– 1/2 cup butter
– 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a baking dish (about 8×8 inches) or a similar size.
In a mixing bowl, combine the flour, sugar, baking powder, and salt. In another bowl, whisk together the egg, apricot jam, and vanilla extract. Add the milk and melted butter, mixing until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until smooth. Pour the batter into the prepared baking dish.
Bake in the preheated oven for about 30-35 minutes, or until a skewer inserted into the center comes out clean.
While the pudding is baking, combine the cream, milk, sugar, butter, and vanilla extract in a saucepan over medium heat. Stir until the butter melts and the sugar dissolves. Do not bring it to a boil.
Once the pudding is done, remove it from the oven and immediately pour the hot sauce over it, ensuring it is well soaked.
Allow the pudding to sit for a few minutes to absorb the sauce. Serve warm, ideally with vanilla ice cream or whipped cream.
