1. Ingredients

For the Dough:

– Ragi flour (finger millet flour) – 1 cup
– Whole wheat flour – 1/2 cup
– Salt – 1/4 tsp
– Warm water – as needed

For the Filling:

– Finely chopped cabbage – 1 cup
– Finely chopped carrots – 1/2 cup
– Finely chopped mushrooms – 1/2 cup (optional, can replace with more veggies)
– Finely chopped onions – 1/2 cup
– Finely chopped garlic – 2 cloves
– Ginger, grated – 1 tsp
– Soy sauce – 1 tbsp
– Salt – to taste
– Black pepper – 1/2 tsp

– Oil – 1 tsp (for cooking the filling)

For the Jhol (Broth):

– Vegetable or chicken broth – 4 cups
– Soy sauce – 2 tbsp
– Ginger, finely grated – 1 tsp
– Garlic, minced – 2 cloves
– Chili flakes – 1/2 tsp (optional, for heat)
– Salt – to taste
– Chopped spring onions or coriander – for garnish

2. Instructions

Step 1- Prepare the Dough:

– In a mixing bowl, combine ragi flour, whole wheat flour, and salt.
– Gradually add warm water and knead to form a smooth, elastic dough.
– Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Step 2- Prepare the Filling:

– Heat oil in a pan over medium heat.
– Add garlic, ginger, and onions, and sauté until onions are translucent.
– Add chopped vegetables and stir-fry until they are tender and any excess moisture evaporates.
– Stir in soy sauce, salt, and black pepper. Cook for a few more minutes.
