Here’s a classic recipe for making delicious and creamy kulfi, a popular Indian frozen dessert:
– 2 cups whole milk
– 1/2 cup heavy cream
– 1/2 cup sugar (adjust to taste)
– 1/4 cup condensed milk
– 1/4 cup milk powder
– 1/4 cup chopped nuts (such as almonds, pistachios, or cashews)
– 1/2 tsp cardamom powder
– 1/2 tsp saffron strands (optional, soaked in 1 tbsp warm milk)
– 1/4 cup chopped fresh mango (optional, for mango kulfi variation)
– In a heavy-bottomed pan, heat the whole milk over medium heat. Bring it to a simmer and cook for about 10-15 minutes, stirring frequently to prevent it from sticking to the bottom.
– Stir in the sugar, condensed milk, and milk powder. Continue to cook the mixture, stirring frequently, until it thickens slightly, about 10-15 minutes.
– Add the cardamom powder and saffron (if using). Mix well. If making mango kulfi, add the chopped mango at this stage and stir to combine.
– Remove the pan from heat and let the mixture cool slightly.
– Stir in the chopped nuts.
– Pour the kulfi mixture into kulfi molds or ice cream molds. You can also use small paper cups or silicone molds.
– Cover the molds with a lid or plastic wrap. Freeze for at least 6-8 hours, or until the kulfi is firm and set.
– To unmold, briefly dip the bottom of the mold in warm water to loosen the kulfi. Gently pull the kulfi out and serve immediately. Garnish with additional chopped nuts or saffron if desired.
