1. Ingredients

For the Dough:

– 2 cups all-purpose flour
– 1 teaspoon sugar
– 1 teaspoon salt
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 2 tablespoons yogurt
– 2 tablespoons oil or ghee
– Warm water (as needed)

For the Filling:

– 1 cup paneer (cottage cheese), crumbled
– 1 small onion, finely chopped
– 1-2 green chilies, finely chopped (optional)
– 1 tablespoon fresh coriander, chopped
– 1/2 teaspoon cumin seeds
– 1/2 teaspoon garam masala
– 1/2 teaspoon chili powder
– Salt to taste

2. Instructions

Step 1- Prepare the Dough:

– In a mixing bowl, combine flour, sugar, salt, baking powder, and baking soda.
– Add yogurt and oil/ghee, and mix well.
– Gradually add warm water and knead to form a soft, elastic dough.
– Cover the dough with a damp cloth and let it rest for at least 1-2 hours.

Step 2- Prepare the Filling:

– In a bowl, mix crumbled paneer, chopped onion, green chilies (if using), coriander, cumin seeds, garam masala, chili powder, and salt.

Step 3- Assemble the Kulchas:

– Divide the dough into equal portions and roll each portion into a small circle.
– Place a spoonful of the paneer filling in the center of the dough circle.
– Gather the edges of the dough to enclose the filling and pinch them together to seal.
– Gently flatten and roll out the filled dough into a round, using a rolling pin. Be careful not to let the filling spill out.

Step 4- Cook the Kulchas:

– Heat a tawa or skillet over medium heat.
– Place the rolled kulcha on the tawa and cook until bubbles start to appear.
– Flip and cook the other side, pressing down gently.
– Optionally, you can brush the kulcha with a little ghee or butter while cooking for extra flavor.

Step 5- Serve:

– Serve hot with yogurt, pickles, or any curry of your choice.
