Here’s an easy recipe for Kashmiri Pulao, a fragrant and flavorful rice dish enriched with fruits and nuts.
– 1 cup basmati rice
– 2 cups water
– 1 medium onion, thinly sliced
– 1 tablespoon ghee or oil
– 1 teaspoon cumin seeds
– 2-3 green cardamom pods
– 2-3 cloves
– 1-inch cinnamon stick
– 1 bay leaf
– 1 cup mixed fruits (like chopped apples, pineapple, and pomegranate seeds)
– 1/4 cup mixed nuts (like cashews and almonds)
– 1/4 cup raisins
– Salt, to taste
– A pinch of saffron (optional)
– 1 tablespoon milk (for saffron, if using)
– Fresh mint leaves
– Chopped cilantro
– Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 30 minutes, then drain.
– In a large pot, heat the ghee or oil over medium heat. Add the cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for a minute until fragrant.
– Add the sliced onions and cook until golden brown.
– Add the drained rice to the pot and gently stir for a couple of minutes to toast the rice slightly.
– Pour in 2 cups of water and add salt to taste. If using saffron, dissolve it in the milk and add it to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.
– Once the rice is cooked, fluff it gently with a fork. Add the mixed fruits, nuts, and raisins. Stir gently to combine.
– Garnish with fresh mint and chopped cilantro. Serve hot with yogurt or raita.
