Ingredients:

  • 2 ripe mangoes, diced
  • 1 small red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and finely chopped (optional, for heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1-2 limes
  • Salt to taste

Instructions:

STEP 1- Prepare the Mangoes: Peel the mangoes and dice them into small cubes. If you’re unsure how to cut a mango, you can slice off the sides, score the flesh in a grid pattern, and then scoop out the cubes with a spoon.

STEP 2- Chop the Vegetables: Finely chop the red onion, red bell pepper, and jalapeño pepper. Remember, if you prefer a milder salsa, you can remove the seeds and membranes from the jalapeño before chopping.

STEP 3- Combine Ingredients: In a mixing bowl, combine the diced mangoes, chopped red onion, red bell pepper, jalapeño pepper (if using), and fresh cilantro.

STEP 4- Add Lime Juice: Squeeze the juice of one to two limes over the mixture, depending on your taste preferences. The lime juice adds a zesty tanginess that perfectly complements the sweetness of the mangoes.

STEP 5- Season to Taste: Sprinkle a pinch of salt over the salsa and gently toss everything together until well combined. Taste and adjust the seasoning if needed, adding more lime juice or salt as desired.

STEP 6- Chill and Serve: For the best flavor, cover the salsa and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. Once chilled, give it a final stir and serve it up with your favorite dishes or as a standalone snack with tortilla chips.
